Finger licking good like guacamole

Avocado toast. So simple and delicious, it is perfect when you need a quick and nutritious breakfast. No wonder it has taken breakfast tables all over the world by storm.



Confession: I never liked avocado. I know… I am a freak of nature. Thanks to the insane trendiness of the avocado toast, it became impossible to ignore the health properties of this superfood.  What makes the avocado such an unique piece of fruit? Avocados are packed with vitamins. They are low-carb friendly, meaning the majority of it’s carbohydrates are fiber. Fiber can contribute to weight loss, reduce blood sugar spikes and is strongly linked to a lower risk of many diseases and not to mention that it is known to be able to feed the friendly gut bacteria in the intestine. Clearly, we all should board the avocado train.

A few years back Caroline posted an amazing guacamole recipe, it looked delicious and it was. What it cool about her recipe, is that she discovered it while on holiday in Mexico and actually videotaped it being made! Doesn’t get much more authentic then that. To make it more in according with my taste, I just added in more tomato and onion than she did.

To begin, simply toast your bread. You can use any kind of toast or sliced bread you have but I like to use crusty bread or whole grain toast.  Next, smash an avocado in a small bowl with a fork. Add chopped up red onion, juice of  lime, salt and pepper then spread the mixture on the avocado. Top with tomatoes.


Guacamole Toast

Serves: 1
  • 2 slices of bread
  • ⅓ - ½ avocado.
  • Red onion.
  • Squeeze of lime juice.
  • 4 baby plum tomatoes.
  • Salt.
  • Pepper.
  1. Toast bread slices until golden and crispy.
  2. In a bowl mash up the avocado with a fork.
  3. Chop up the red onion.
  4. Add a the red onion, lemon juice, salt and pepper to the bowl. Blend.
  5. Spread on the avocado mixture on the toast.
  6. Top with baby plum tomatoes.
